Roasted beef tenderloin, sautéed wild mushrooms, Bordelaise sauce served with blue lake green beans, brown butter, crispy shallots, roasted potatoes fondants and caramelized onions.
Beef tenderloin seared, brushed with purple mustard, roasted, rested then sliced, served on a bed of sautéed wild and domestic mushrooms, and 24 Oz side of bordelaise sauce, red wine reduction with beef stock.
Green beans blanched tossed with brown butter and topped with thinly sliced crispy shallots.
Potatoes fondantes (melting potatoes) are seared then cooked slowly with caramelized onions and chicken stock.
